  • 3 cups medium-grain rice (rinsed)
  • 3.5 cups chicken broth
  • 15 ounces pigeon peas (gandules), canned
  • 2 tablespoons cilantro (chopped, for garnish)

Directions

Step 1

Heat a large, heavy-bottomed pot or Dutch oven over medium heat and add the olive oil.
