Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 0.5 teaspoon salt
  • 2 cups broccoli florets
  • 2 tablespoons unsalted butter
  • 0.5 cup parmesan cheese, grated
  • 0.25 teaspoon ground black pepper
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil

Directions

Step 1

Rinse the rice under cold water until the water runs clear. This helps remove excess starch and ensures fluffy rice.

Step 2

In a medium saucepan, bring the 2 cups of water and 0.5 teaspoon of salt to a boil.

Step 3

Add the rice to the boiling water, reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and the water is fully absorbed. Remove from heat and let it sit covered for 5 minutes.

Step 4

While the rice is cooking, prepare the broccoli. Bring a large pot of salted water to a boil and blanch the broccoli florets for 2-3 minutes, or until bright green and tender-crisp. Drain and set aside.

Step 5

In a large skillet, heat the olive oil and unsalted butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.

Step 6

Add the cooked broccoli to the skillet and toss to coat it with the garlic mixture. Cook for another 2 minutes to heat through.

Step 7

Fluff the cooked rice with a fork and add it to the skillet with the broccoli. Stir to combine evenly.

Step 8

Sprinkle the grated Parmesan cheese over the rice and broccoli mixture. Stir until the cheese is fully melted and evenly distributed.

Step 9

Season with black pepper and additional salt to taste, if needed.

Step 10

Serve warm and enjoy!
