Ingredients

  • 4 Large artichokes
  • 3 tablespoons Olive oil
  • 1 Yellow onion, finely chopped
  • 3 Garlic cloves, minced
  • 2 cups Cooked white rice
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh dill, chopped
  • 1 teaspoon Lemon zest
  • 1 cup Parmesan cheese, grated
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 cups Vegetable broth
  • 2 tablespoons Unsalted butter
  • 2 tablespoons All-purpose flour
  • 3 tablespoons Lemon juice
  • 1 cup Water

Directions

Step 1

Trim the artichokes by cutting off the stems so they can sit flat. Remove the small, tough outer leaves and cut about 1 inch from the top of each artichoke. Use scissors to snip off the sharp tips of the remaining leaves.

Step 2

Place the artichokes in a large pot of boiling salted water. Cover and boil for 15–20 minutes, or until the leaves pull away easily but the artichokes are not overly soft. Drain and let cool slightly.

Preheat your oven to 375°F (190°C).

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another 1–2 minutes.

While the artichokes are baking, prepare the lemon sauce. In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute, whisking constantly.

Gradually add the water and lemon juice to the saucepan, whisking to prevent lumps. Continue whisking until the sauce thickens, about 2–3 minutes. Remove from heat.
