  • 1.5 teaspoons salt
  • 0.5 teaspoon pepper
  • 3 cups cooked white or brown rice
  • 1 cup shredded cheddar cheese (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat olive oil in a large skillet over medium heat. Add the chopped onion, carrots, and celery. Sauté for 5–7 minutes until the vegetables are softened.
