Ingredients

  • 1 cup Jasmine rice (or other short-grain rice)
  • 2 cups Coconut milk
  • 1 cup Water
  • 0.333 cup Sugar
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0 Ground cinnamon (for garnish, optional)
  • 0 Shredded coconut (for garnish, optional)

Directions

Step 1

Rinse the jasmine rice thoroughly under cold water until the water runs clear. This removes excess starch and prevents the pudding from becoming too sticky.

Step 2

In a medium-sized saucepan, combine the rinsed rice, coconut milk, water, sugar, and salt. Mix well to dissolve the sugar.

Step 3

Place the pan over medium heat and bring the mixture to a gentle boil. Stir occasionally to prevent the rice from sticking to the bottom of the pan.

Step 4

Once the mixture begins to boil, reduce the heat to low and simmer uncovered. Stir occasionally to make sure the rice cooks evenly and doesn't clump.

Step 5

Cook for about 30-35 minutes, or until the rice is soft and the mixture thickens to a pudding-like consistency. You can adjust the cook time based on your desired texture.

Step 6

Remove the saucepan from heat and stir in the vanilla extract.

Step 7

Let the rice pudding cool for a few minutes. It will continue to thicken as it cools.

Step 8

Spoon the pudding into individual serving bowls. If desired, garnish with a sprinkle of ground cinnamon and shredded coconut for extra flavor and texture.

Step 9

Serve warm or chilled, depending on your preference. Refrigerate any leftovers in an airtight container for up to 3 days.
