Ingredients

  • 1 Carrot, julienned
  • 1 Red bell pepper, thinly sliced
  • 2 Green onions, chopped
  • 0.25 cup Fresh cilantro, chopped
  • 0.25 tsp Crushed red pepper flakes (optional)
  • 0.25 cup Roasted peanuts or cashews for garnish

Directions

Step 1

Soak the raw cashews in hot water for 10-15 minutes, then drain.

Cook the rice noodles according to the package instructions. Drain and rinse with cold water to prevent sticking. Set aside.
