Ingredients

  • 1 cup Rice flour
  • 0.5 cup Tapioca starch
  • 0.5 cup Cornstarch
  • 3 cups Water
  • 2 tablespoons Vegetable oil
  • 0.5 teaspoon Salt
  • 8 pieces Shrimp, peeled and deveined
  • 2 tablespoons Soy sauce
  • 1 teaspoon Sugar
  • 1 teaspoon Sesame oil

Directions

Step 1

In a large mixing bowl, combine rice flour, tapioca starch, cornstarch, and salt. Gradually add the water, whisking continuously to form a smooth, lump-free batter.

Step 2

Add 2 tablespoons of vegetable oil to the batter and mix well.

Step 3

Prepare a steamer with water and bring it to a boil. Lightly grease a flat, heat-proof pan or tray that fits inside your steamer.

Step 4

When the water is boiling, pour a thin layer of the batter onto the prepared pan. Spread it evenly.

Step 5

Place about 2 shrimp pieces on top of the batter evenly spaced.

Step 6

Carefully transfer the pan into the steamer. Cover and steam for about 5 minutes, or until the noodle is set and slightly translucent.

Step 7

While the noodle is steaming, mix the soy sauce, sugar, and sesame oil in a bowl and set aside.

Step 8

Remove the pan from the steamer. Using a spatula, gently loosen the cooked rice noodle and roll it over the shrimp. Transfer to a serving dish.

Step 9

Repeat the process with the remaining batter and shrimp.

Step 10

Once done, drizzle the prepared soy sauce mixture over the rice noodle rolls before serving.

Step 11

Serve immediately, while still warm, as part of a meal or dim sum spread.
