Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 3 medium fresh peaches
  • 1 medium cucumber

  • 0.25 cup fresh mint leaves

  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup toasted almond slices

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

In a medium saucepan, combine the rinsed rice with 2 cups of water. Bring to a boil, reduce the heat to low, cover, and simmer for 15–20 minutes until the rice is tender and the water is absorbed.
