Rinse the rice and lentils separately under cold running water until the water runs clear. Set aside.
In a medium saucepan, bring 4 cups of water to a boil. Add the lentils and 1 teaspoon of salt. Lower the heat to medium and simmer for 15–20 minutes, or until the lentils are tender but still hold their shape. Drain and set aside.
In a separate pot, heat 1 cup of water along with a pinch of salt. Add the rinsed rice, bring to a boil, then reduce the heat to low. Cover and let the rice cook for 15 minutes, or until all the water is absorbed. Remove from heat and let it sit covered for another 5 minutes before fluffing with a fork.
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3–4 minutes, until translucent.
Add the minced garlic, ground cumin, and cinnamon, and cook for another minute, stirring constantly to toast the spices.
Stir in the cooked lentils, rice, and dried cranberries. Mix well to combine and heat through for 2–3 minutes. Adjust seasoning with the remaining 0.5 teaspoon of salt, or to taste.
Toast the pine nuts in a small dry pan over medium heat for 2–3 minutes, shaking the pan frequently, until they are golden brown and aromatic. Be careful not to burn them.
Serve the rice and lentil mixture warm, garnished with the toasted pine nuts and a sprinkle of chopped parsley, if desired.
