  • 2 cups cooked white or brown rice
  • 1 cup black beans (drained and rinsed)
  • 1 cup diced bell peppers (any color)

  • 2 cups shredded cheddar or Mexican blend cheese
  • 8 pieces flour or corn tortillas
  • 2 cups enchilada sauce
  • 1 tablespoon olive oil
  • 1 medium onion (diced)
  • 2 pieces garlic cloves (minced)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.25 cup fresh cilantro (chopped, optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for 1 minute until fragrant.

Stir in the diced bell peppers, black beans, and corn. Cook for 3-4 minutes until the vegetables are tender.
