Ingredients

  • 1 cup long-grain rice
  • 2 cups water
  • 4 cups baby spinach leaves
  • 1 cup cherry tomatoes
  • 1 medium cucumber
  • 1 small red onion
  • 0.5 cup feta cheese
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of rinsed rice and a pinch of salt. Reduce heat to low, cover, and let simmer for 15 minutes or until the water is absorbed and the rice is tender.

While the rice is cooking, prepare the vegetables. Halve the cherry tomatoes, peel and dice the cucumber, and finely slice the red onion.
