Ingredients

  • 1 cup long-grain white rice
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 medium, diced yellow onion
  • 3 minced garlic cloves
  • 2 peppers, chopped chipotle peppers in adobo sauce
  • 1 tablespoon adobo sauce
  • 1.5 cups frozen corn kernels
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 0.25 cup, chopped fresh cilantro
  • 1 medium, juiced lime
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Set aside to drain.

Step 2

In a medium saucepan, heat the vegetable broth over low heat and keep it warm.

Step 3

In a large skillet or saucepan, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

Add the minced garlic and cook for another 30 seconds until fragrant.
