Ingredients

  • 1 box Rice-A-Roni (Original or Chicken Flavor)
  • 1 pound Shrimp (peeled, deveined, and cooked)
  • 1 cup Marinated artichoke hearts (drained and chopped)
  • 1 large Red bell pepper (diced)
  • 4 stalks Green onions (thinly sliced)
  • 0.25 cup Fresh parsley (chopped)
  • 0.5 cup Mayonnaise
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Cook the Rice-A-Roni according to the package instructions, using olive oil to toast the rice. Once cooked, set aside to cool completely.

While the rice is cooking, prepare the shrimp. If using raw shrimp, boil or sauté them until pink and cooked through. Alternatively, use pre-cooked shrimp. Allow to cool.
