Ingredients

  • 1 box Beef-flavored Rice-A-Roni
  • 1 pound Ground beef
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic, minced
  • 1.5 cups Frozen mixed vegetables
  • 2.5 cups Beef broth
  • 2 cups Shredded cheddar cheese
  • 2 tablespoons Butter
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 2 tablespoons Parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Prepare the Rice-A-Roni according to the package instructions in a large skillet, using the 2 tablespoons of butter.

Step 3

While the Rice-A-Roni is cooking, heat a separate skillet over medium heat and brown the ground beef. Break it into crumbles as it cooks.

Step 4

Add the diced onion and minced garlic to the ground beef and cook for 4-5 minutes, until the onion is softened and translucent.

Step 5

Once the Rice-A-Roni is cooked, transfer it to a large mixing bowl. Stir in the cooked ground beef mixture, frozen mixed vegetables, and 2 cups of beef broth.

Step 6

Add the salt and ground black pepper, then mix everything until well combined.

Step 7

Pour the mixture into a greased 9x13-inch baking dish and spread it out evenly.

Step 8

Sprinkle the shredded cheddar cheese evenly over the top.

Step 9

Cover the dish tightly with aluminum foil and bake for 25 minutes.

Step 10

Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Step 11

Let the casserole rest for 5 minutes before serving. Garnish with chopped parsley if desired.
