Ingredients

  • 2 racks Baby back ribs
  • 2 tablespoons Kosher salt
  • 1 tablespoon Ground black pepper
  • 2 teaspoons Smoked paprika
  • 2 tablespoons Brown sugar
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.25 cup Bourbon
  • 0.25 cup Tequila
  • 0.25 cup Dark rum
  • 1 cup Barbecue sauce
  • 2 tablespoons Honey
  • 2 tablespoons Apple cider vinegar
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 275°F (135°C).

Step 2

Prepare the ribs by removing the silver membrane from the back of each rack. Use a knife to lift the edge and a paper towel to grip and pull it off.

Step 3

In a small bowl, mix together the kosher salt, ground black pepper, smoked paprika, brown sugar, garlic powder, and onion powder to create the dry rub.

Step 4

Rub the spice mixture generously over both sides of the ribs, ensuring an even coating.

Step 5

Wrap each rack of ribs tightly in aluminum foil and place them on a baking sheet, meat side up.

Step 6

Bake the ribs in the preheated oven for 2.5 hours, or until tender.

Step 7

While the ribs bake, prepare the triple liquor glaze: In a saucepan over medium heat, combine the bourbon, tequila, and dark rum. Bring to a simmer and let the alcohol cook off for about 5 minutes.

Step 8

Add the barbecue sauce, honey, and apple cider vinegar to the saucepan. Stir well and continue simmering for another 10 minutes, or until the glaze thickens slightly.

Step 9

Once the ribs are done baking, remove them from the aluminum foil and place them on a grill or a lined baking sheet.

Step 10

Brush the ribs generously with the glaze and sear them on a preheated grill over medium heat (or broil them in the oven) for 5–7 minutes per side, turning occasionally and basting with more glaze, until caramelized and slightly charred.

Step 11

Remove the ribs from the grill or oven and let them rest for 5 minutes before slicing into individual ribs.

Step 12

Serve the ribs with any remaining glaze on the side and enjoy!
