Ingredients

  • 4 pieces rib eye steaks
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 cup whiskey
  • 1 cup heavy cream
  • 1 cup blue cheese, crumbled
  • 2 cups cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Remove the rib eye steaks from the refrigerator 30 minutes before cooking to bring them to room temperature.

Step 2

Season both sides of the steaks generously with salt and black pepper.

Heat a large cast-iron skillet over medium-high heat. Add 1 tablespoon of olive oil and 1 tablespoon of unsalted butter to the pan.

Once the skillet is hot, sear the rib eyes for 3-4 minutes on each side for medium-rare, or adjust the time for your preferred level of doneness. Remove the steaks from the skillet, tent with foil, and let them rest while preparing the sauce.
