Ingredients

  • 2 pieces rib eye steaks
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 ounces cremini mushrooms
  • 2 small, finely chopped shallots
  • 2 cloves, minced garlic
  • 1 cup brandy
  • 1 cup heavy cream
  • 4 ounces blue cheese
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Season the rib eye steaks generously with salt and black pepper on both sides. Let them sit at room temperature for 20-30 minutes before cooking.

Step 2

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once hot, add the rib eye steaks to the skillet. Sear the steaks for about 3-4 minutes per side for medium-rare, or until your desired doneness is reached.

Step 3

Remove the steaks from the skillet and let them rest on a plate, loosely covered with aluminum foil.

Step 4

In the same skillet, add the remaining olive oil and butter. Add the chopped shallots and sauté for 2-3 minutes until soft. Then, stir in the minced garlic and cook for another minute.

Step 5

Add the sliced cremini mushrooms to the skillet. Cook the mushrooms for about 5-7 minutes, stirring occasionally, until golden brown and tender.

Step 6

Carefully pour the brandy into the skillet and deglaze by scraping the browned bits from the bottom of the pan. Let the brandy simmer for 2-3 minutes to reduce slightly.

Step 7

Lower the heat to medium and stir in the heavy cream. Let the sauce simmer gently for another 2-3 minutes, or until it slightly thickens.

Step 8

Crumble in the blue cheese and stir until it melts into the sauce, creating a smooth and creamy texture.

Step 9

Return the rib eye steaks to the skillet, spooning the mushroom and brandy sauce over the steaks. Cook for an additional 1-2 minutes to heat everything through.

Step 10

Garnish with freshly chopped parsley and serve the steaks hot with the mushroom and brandy sauce spooned over the top. Pair with your favorite side dish like mashed potatoes or roasted vegetables.
