Ingredients

  • 2 cups Rolled oats
  • 1 cup Almond flour (or finely ground oats)
  • 2 medium Ripe bananas
  • 0.5 cup Creamy almond butter (or peanut butter)
  • 0.3333 cup Honey or maple syrup
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Chocolate chips (optional)
  • 0.5 cup Dried cranberries or raisins (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, mash the ripe bananas until smooth.

Step 3

Add the almond butter, honey or maple syrup, and vanilla extract to the mashed bananas. Mix well until fully combined.

Step 4

In a separate bowl, combine the rolled oats, almond flour, ground cinnamon, baking powder, and salt. Stir to incorporate.

Step 5

Slowly add the dry ingredients to the wet ingredients, folding them together until a dough forms.

Step 6

If desired, fold in the optional chocolate chips and/or dried fruit for extra flavor and texture.

Step 7

Use a spoon or cookie scoop to drop 12 evenly sized mounds of dough onto the prepared baking sheet. Flatten each mound slightly with the back of the spoon to form a cookie shape.

Step 8

Bake in the preheated oven for 15 minutes or until the edges are lightly golden.

Step 9

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
