Ingredients

  • 4 cups rhubarb stalks
  • 6 cups water
  • 1 cup granulated sugar
  • 4 large lemons
  • 4 cups cold water
  • 2 cups ice cubes
  • 6 leaves fresh mint leaves (optional)

Directions

Step 1

Wash and trim the rhubarb stalks, then chop them into 1-inch pieces.

In a large saucepan, combine the rhubarb pieces and 6 cups of water. Bring to a boil over medium-high heat.

Lower the heat and simmer for about 10-15 minutes, or until the rhubarb has completely broken down and the water turns pink.
