Ingredients

  • 200 grams semolina
  • 100 grams all-purpose flour
  • 200 grams granulated sugar
  • 125 grams unsalted butter (softened)
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 120 milliliters milk
  • 1 tablespoon orange zest
  • 300 milliliters water (for syrup)
  • 250 grams granulated sugar (for syrup)
  • 2 tablespoons lemon juice (for syrup)
  • 1 tablespoon honey (for syrup)
  • 2 small cloves (optional, for syrup)
  • 50 grams chopped almonds or pistachios (optional, for garnish)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a rectangular baking dish (approximately 9x13 inches).

Step 2

In a mixing bowl, cream together the softened butter and sugar until light and fluffy, using a hand or stand mixer.

Step 3

Add the eggs one at a time, beating thoroughly after each addition. Mix in the vanilla extract and orange zest.

Step 4

In a separate bowl, combine the semolina, all-purpose flour, and baking powder.

Step 5

Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the dry ingredients, mixing until just combined.

Step 6

Pour the batter evenly into the prepared baking dish and smooth the surface with a spatula.

Step 7

Bake for 35-40 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.

Step 8

While the cake is baking, prepare the syrup. In a medium saucepan, combine the water, sugar, lemon juice, honey, and cloves (if using). Bring to a boil, then reduce the heat and simmer for 8-10 minutes. Remove from heat and let cool slightly.

Step 9

Once the cake comes out of the oven, let it cool for 5 minutes. Cut the cake into diamond or square shapes while it's still in the pan.

Step 10

Gradually pour the warm syrup over the cake, ensuring it is evenly soaked. Allow the cake to absorb the syrup completely.

Step 11

Garnish with chopped almonds or pistachios, if desired, and let the cake sit for at least 1 hour before serving to allow the flavors to meld.

Step 12

Serve at room temperature and enjoy this delightful, syrup-infused Greek dessert!
