Ingredients

  • 4 large Russet potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 cup Corned beef, cooked and chopped
  • 1 cup Sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 0.25 cup Mayonnaise
  • 2 tablespoons Ketchup
  • 1 teaspoon Prepared horseradish
  • 0.5 teaspoon Worcestershire sauce
  • 0.25 teaspoon Paprika
  • 2 stalks Green onions, sliced (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and dry the russet potatoes. Prick each potato several times with a fork to allow steam to escape.

Step 3

Rub the potatoes with olive oil and sprinkle them with salt. Place them directly on the oven rack and bake for 60 minutes or until tender when pierced with a knife.

Step 4

While the potatoes are baking, prepare the Russian dressing by mixing mayonnaise, ketchup, horseradish, Worcestershire sauce, and paprika in a small bowl. Set aside.

Step 5

Once the potatoes are cooked, remove them from the oven and allow them to cool slightly for about 5 minutes.

Step 6

Slice each potato lengthwise down the center, being careful not to cut all the way through. Gently squeeze the ends to open them up.

Step 7

Using a fork, fluff the potato flesh slightly to create a bed for the toppings.

Step 8

Layer the toppings evenly over each potato: start with the chopped corned beef, followed by sauerkraut, and then shredded Swiss cheese.

Step 9

Return the topped potatoes to the oven for an additional 10-12 minutes, or until the cheese is melted and bubbly.

Step 10

Drizzle the Russian dressing over the hot baked potatoes and garnish with sliced green onions, if desired.

Step 11

Serve immediately and enjoy your Reuben Baked Potatoes!
