Ingredients

  • 2 pounds Ground beef (80/20 blend)
  • 1 pound Ground pork
  • 2 large Eggs
  • 1 cup Grated Parmesan cheese
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic, minced
  • 1.5 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Smoked paprika
  • 1.5 teaspoons Kosher salt
  • 1 teaspoon Black pepper
  • 0.5 cup Ketchup
  • 2 tablespoons Brown sugar
  • 1 teaspoon Apple cider vinegar

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan for easy cleanup.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onions and cook until soft and translucent, about 5 minutes. Add the minced garlic and cook for another minute. Remove from heat and let cool slightly.

Step 3

In a large mixing bowl, combine the ground beef, ground pork, eggs, Parmesan cheese, cooked onions and garlic, Worcestershire sauce, Dijon mustard, parsley, smoked paprika, salt, and black pepper.

Step 4

Using clean hands (or a spatula), mix the ingredients until just combined. Be careful not to overmix, as this can result in a dense meatloaf.

Step 5

Shape the mixture into a loaf shape and place it on the prepared baking sheet, or press it evenly into the loaf pan.

Step 6

In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar. Brush half of this glaze over the top of the meatloaf.

Step 7

Bake in the preheated oven for 45 minutes. Remove from the oven and spread the remaining glaze evenly over the top. Return the meatloaf to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).

Step 8

Let the meatloaf rest for 10 minutes after baking before slicing. This will help it hold its shape and allow the juices to redistribute.

Step 9

Slice and serve warm with your favorite side dishes, such as mashed potatoes, roasted vegetables, or a fresh salad. Enjoy your restaurant-style meal!
