Ingredients

  • 900 grams sauerkraut
  • 150 grams bacon
  • 1 large onion
  • 2 cloves garlic
  • 1 medium apple
  • 6 pieces juniper berries
  • 1 piece bay leaf
  • 1 teaspoon caraway seeds
  • 120 milliliters white wine
  • 250 milliliters chicken stock
  • 0.5 teaspoons black pepper
  • 1 tablespoon butter
  • 1 teaspoon brown sugar

Directions

Step 1

Rinse the sauerkraut under cold water for 30 seconds to reduce its acidity, if desired. Squeeze out the excess water and set aside.

Step 2

Dice the bacon into small pieces. Peel and finely chop the onion and garlic. Core and grate the apple.

Step 3

In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.

Step 4

Add the butter to the pot and melt it in the bacon fat. Add the onion and cook for 5 minutes, or until it becomes translucent.

Stir in the garlic and grated apple. Cook for another 2 minutes until fragrant.

Add the rinsed sauerkraut to the pot, followed by the juniper berries, bay leaf, caraway seeds, and brown sugar. Stir to combine.

Pour in the white wine and chicken stock. Stir well and bring the mixture to a gentle simmer.

Cover the pot with a lid and let the sauerkraut simmer on low heat for 30-35 minutes, stirring occasionally.

If the mixture dries out too much during cooking, add a little extra chicken stock or water.

Once cooked, remove the bay leaf and juniper berries. Season the sauerkraut with black pepper to taste.
