Ingredients

  • 6 medium-sized Potatoes
  • 2 teaspoons Salt
  • 1 pound Ground beef
  • 2 Garlic cloves
  • 1 small Onion
  • 1 small Green bell pepper
  • 0.5 cup Tomato sauce
  • 1 teaspoon Adobo seasoning
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Paprika
  • 1 tablespoon Olive oil
  • 1 large Egg
  • 0.5 cup Cornstarch
  • 4 cups Vegetable oil
  • 8 cups Water for boiling

Directions

Step 1

Peel the potatoes and cut them into quarters. Place them in a large pot and cover with 8 cups of water. Boil with 1 teaspoon of salt until the potatoes are fork-tender, about 20 minutes.

Step 2

Drain the potatoes and mash them until smooth. Set aside and allow them to cool completely.

Step 3

While the potatoes cool, prepare the filling. Finely dice the onion, garlic cloves, and green bell pepper.

Step 4

In a skillet, heat the olive oil over medium heat. Add the onion, garlic, and bell pepper, and sauté until softened, about 5 minutes.

Step 5

Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned, about 7-8 minutes. Drain any excess fat.

Step 6

Stir in the tomato sauce, adobo seasoning, ground cumin, and paprika. Simmer for 5 minutes until the mixture is thickened. Remove from heat and allow it to cool slightly.

Step 7

Once the potatoes have cooled, mix in the egg and 1/2 cup of cornstarch. Knead the mixture gently with your hands until it forms a pliable dough.

Step 8

Take a handful of the potato mixture and flatten it into a patty in your palm. Place a spoonful of the beef filling in the center, then fold the potato mixture around it to form a ball. Repeat until all the potato dough and filling are used.

Step 9

Heat the vegetable oil in a heavy-bottomed pot or deep fryer to 350°F (175°C).

Step 10

Fry the potato balls in batches, turning occasionally, until golden brown and crispy on all sides, about 4-5 minutes per batch.

Step 11

Use a slotted spoon to transfer the fried rellenos to a paper towel-lined plate to drain excess oil.

Step 12

Serve hot and enjoy your crispy, flavorful Rellenos De Papa!
