Ingredients

  • 2 pounds Yukon Gold potatoes
  • 2 whole Garlic cloves
  • 0.75 cups Low-fat milk
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel the Yukon Gold potatoes and cut them into evenly sized chunks, roughly 2 inches wide.

Step 2

Place the potato chunks and the whole garlic cloves in a large pot. Add enough water to cover the potatoes by 1 inch and sprinkle 1/4 teaspoon of salt into the water.

Step 3

Bring the pot to a boil over high heat. Reduce the heat to medium-low and simmer for 15-20 minutes or until the potatoes are fork-tender.

Step 4

While the potatoes are cooking, warm the low-fat milk in a small saucepan over low heat. Do not allow it to boil; just warm it enough to prevent it from cooling the potatoes during mixing.

Step 5

Once the potatoes are done cooking, drain them in a colander and return them to the pot. Allow them to sit for 1-2 minutes to let excess moisture evaporate.

Step 6

Using a potato masher or ricer, mash the potatoes and garlic until smooth. Avoid over-mixing to prevent the potatoes from becoming gummy.

Step 7

Slowly incorporate the warmed milk and olive oil into the mashed potatoes, stirring gently with a wooden spoon or spatula until creamy and light.

Step 8

Season with the remaining salt and black pepper to taste.

Step 9

Garnish with freshly chopped parsley before serving.
