Ingredients

  • 16 ounces Fresh spinach, chopped
  • 4 tablespoons Unsalted butter
  • 1 Small yellow onion, finely diced
  • 2 cloves Garlic, minced
  • 3 tablespoons All-purpose flour
  • 1 cup Whole milk
  • 0.5 cup Heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 0.25 teaspoon Nutmeg, freshly grated
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 teaspoon Olive oil

Directions

Step 1

Wash and thoroughly dry the spinach. Chop it coarsely and set aside.

In a large skillet over medium heat, add the olive oil. Once hot, add the spinach in batches, cooking until wilted. Transfer the cooked spinach to a colander and press out excess liquid. Set aside.
