Ingredients

  • 2 cups Graham cracker crumbs
  • 0.5 cup Unsalted butter, melted
  • 2 tablespoons Granulated sugar
  • 16 ounces Cream cheese, softened
  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Heavy whipping cream
  • 1 cup Crushed pineapple, well drained
  • 0 Pineapple slices and whipped cream (optional, for garnish)

Directions

Step 1

In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix thoroughly until the texture resembles wet sand.

Step 2

Press the graham cracker mixture firmly into the bottom of a 9-inch springform pan to create the crust. Use the bottom of a glass or measuring cup to compact it. Refrigerate for 15 minutes while preparing the filling.

Step 3

In a large bowl, beat the softened cream cheese with a hand or stand mixer until smooth and creamy, about 2-3 minutes.

Step 4

Add powdered sugar and vanilla extract to the cream cheese mixture. Continue mixing until fully incorporated and smooth.

Step 5

In a separate chilled bowl, whip the heavy cream until stiff peaks form, about 3-4 minutes.

Step 6

Gently fold the whipped cream into the cream cheese mixture a little at a time, being careful not to deflate it.

Step 7

Fold in the drained crushed pineapple until evenly distributed.

Step 8

Pour the filling over the prepared crust in the springform pan. Smooth the top with a spatula.

Step 9

Cover the pan with plastic wrap and refrigerate for at least 4 hours or overnight for best results.

Step 10

Before serving, optionally garnish with pineapple slices and whipped cream for decoration. Slice and enjoy!
