  • 1 whole lime

Directions

Step 1

Rinse the dried pinto beans thoroughly under cold water, picking out any debris or damaged beans.

Step 2

In a large pot, combine the beans, water, half of the onion (cut into chunks), garlic cloves, and bay leaf. Bring to a boil over medium-high heat, then reduce to a simmer. Cover and cook for 1.5 to 2 hours or until the beans are tender but not falling apart.

Step 3

Remove and discard the onion chunks, garlic cloves, and bay leaf from the pot. Reserve about 1 cup of the cooking liquid, then drain the beans and set them aside.

Step 4

Finely dice the remaining half of the onion. In a large skillet, heat the lard or vegetable oil over medium heat. Add the diced onion and sauté for 5-7 minutes until soft and golden brown.
