Ingredients

  • 6 pieces Large flour tortillas
  • 2 cups Refried beans
  • 1.5 cups Shredded cheddar cheese
  • 1.5 cups Shredded Monterey Jack cheese
  • 1 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Garlic powder
  • 2 cups Vegetable oil
  • 0.5 cup Sour cream (optional, for serving)
  • 0.5 cup Pico de gallo (optional, for serving)

Directions

Step 1

In a medium mixing bowl, combine the refried beans, chili powder, ground cumin, and garlic powder. Stir until the spices are evenly distributed.

Step 2

Lay a tortilla flat on a clean surface. Spoon about 1/3 cup of the seasoned refried beans onto the center of the tortilla.

Step 3

Sprinkle 1/4 cup of shredded cheddar cheese and 1/4 cup of shredded Monterey Jack cheese over the beans.

Step 4

Fold in the sides of the tortilla, then roll it from the bottom to form a tight burrito-like package. Repeat with the remaining tortillas and filling.

Step 5

Heat the vegetable oil in a deep skillet or heavy-bottomed pot over medium-high heat to about 350°F (175°C).

Step 6

Carefully place the chimichangas seam side down into the hot oil, cooking in batches if necessary to avoid overcrowding.

Step 7

Fry each chimichanga for 2-3 minutes on each side, or until golden brown and crispy. Use tongs or a slotted spoon to carefully remove them from the oil and drain on a paper towel-lined plate.

Step 8

Serve hot with sour cream and pico de gallo, if desired. Enjoy your crispy, cheesy, refried bean chimichangas!
