Ingredients

  • 4 cups Fresh spinach leaves

  • 0.5 cup Feta cheese (crumbled)
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 1 clove Garlic (minced)
  • 0.5 teaspoons Dijon mustard
  • 1 teaspoons Honey
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Rinse and drain the canned chickpeas thoroughly. Set aside.

Step 2

Wash the fresh spinach leaves and pat them dry with a kitchen towel or use a salad spinner. Place the spinach in a large mixing bowl.

Step 3

Halve the cherry tomatoes, dice the cucumber and red bell pepper, and thinly slice the red onion. Add all these vegetables to the bowl with the spinach.
