Ingredients

  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 tablespoon water
  • 2 tablespoons unsalted butter
  • 1.5 cups salted peanuts
  • 1 teaspoon baking soda
  • 1 cup Reese's Peanut Butter Chips
  • 1 teaspoon vanilla extract
  • 1 as needed nonstick cooking spray

Directions

Step 1

Prepare a large baking sheet by lining it with parchment paper and lightly spraying with nonstick cooking spray. Set aside.

Step 2

In a heavy-bottomed saucepan, combine the granulated sugar, light corn syrup, and water. Stir to combine, then place over medium-high heat.

Step 3

Bring the mixture to a boil without stirring, and cook until the sugar dissolves and the mixture reaches 300°F (hard crack stage) on a candy thermometer, about 10-15 minutes.

Step 4

Remove from heat and immediately stir in the unsalted butter, salted peanuts, and baking soda. The mixture will bubble up, so be cautious.

Step 5

Quickly stir in the Reese's Peanut Butter Chips and vanilla extract until the chips are melted and fully incorporated.

Step 6

Immediately pour the hot mixture onto the prepared baking sheet, and spread it into a thin, even layer with a greased spatula.

Step 7

Let the brittle cool completely at room temperature, about 30 minutes, until it hardens.

Step 8

Once fully cooled, break the brittle into pieces and store in an airtight container for up to two weeks.
