Ingredients

  • 113 grams unsalted butter
  • 150 grams light brown sugar
  • 100 grams granulated sugar
  • 1 whole large egg
  • 2 teaspoons vanilla extract
  • 200 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt
  • 150 grams mini chocolate chips
  • 180 grams Reese's peanut butter cups, chopped
  • 60 grams creamy peanut butter

Directions

Step 1

Preheat your oven to 175°C (350°F) and grease a 9-inch (23 cm) pie dish or line it with parchment paper.

Step 2

In a large mixing bowl, cream together the unsalted butter, light brown sugar, and granulated sugar until light and fluffy.

Step 3

Add the egg and vanilla extract, and mix until well combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.

Step 6

Fold in the mini chocolate chips and chopped Reese's peanut butter cups, reserving a small handful for topping.

Step 7

Scoop half the cookie dough into the prepared pie dish and press it evenly into the bottom.

Step 8

Spread the creamy peanut butter over the cookie dough layer in an even layer. Be careful to stay within the edges.

Step 9

Top with the remaining cookie dough and press gently to cover the peanut butter layer completely.

Step 10

Sprinkle the reserved Reese's pieces and mini chocolate chips on top for decoration.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the center is just set.

Step 12

Remove from the oven and let the pie cool in the dish for 10-15 minutes. The center will continue to set as it cools.

Step 13

Serve warm with a scoop of vanilla ice cream or store leftovers in an airtight container for up to 3 days.
