Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 0.75 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter
  • 1 cup creamy peanut butter
  • 3.5 cups powdered sugar
  • 0.25 cup heavy cream
  • 20 pieces mini Reese's cups
  • 0.5 cup chocolate ganache (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans. Line the bottoms with parchment paper for easier release.

Step 2

In a large mixing bowl, sift together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Mix well to combine.

Step 3

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Using an electric mixer on medium speed, mix until the batter is smooth and well-combined.

Step 4

Slowly add the boiling water to the batter, mixing on low speed. The batter will be thin; this is normal.

Step 5

Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Step 6

Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Step 7

While the cakes are cooling, prepare the peanut butter frosting by beating the butter and peanut butter together in a large bowl until creamy and smooth using an electric mixer.

Step 8

Gradually add the powdered sugar, one cup at a time, mixing on low speed until fully incorporated. Add the heavy cream and beat until the frosting reaches a spreadable consistency.

Step 9

Once the cakes are completely cool, place one cake layer on a serving platter. Spread a generous layer of peanut butter frosting on top.

Step 10

Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.

Step 11

Decorate the cake by placing the mini Reese's cups around the top edge of the cake. Drizzle chocolate ganache over the top if desired.

Step 12

Refrigerate the cake for 15-20 minutes before serving to allow the frosting to set. Serve and enjoy!
