Ingredients

  • 6 pieces Chicken thighs (bone-in, skin-on)
  • 2 tablespoons Olive oil
  • 4 cloves Garlic cloves (minced)
  • 1 teaspoon Paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Lemon juice
  • 1 cup Chicken broth
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Pat the chicken thighs dry with a paper towel to help achieve crispier skin. Set aside.

Step 2

In a small bowl, mix together minced garlic, paprika, cumin, oregano, salt, and pepper.

Step 3

Rub the spice mixture generously over the chicken thighs, making sure to coat both the skin and the underside.

Step 4

Heat olive oil in a large skillet over medium-high heat. Once hot, place the chicken thighs skin-side down in the skillet.

Step 5

Cook the chicken thighs for 5–7 minutes on each side, or until the skin is golden brown and crispy. Remove the chicken from the skillet and set it aside on a plate.

Step 6

Lower the heat to medium and melt the butter in the same skillet. Add the lemon juice and chicken broth, scraping the bottom of the pan to deglaze and loosen any browned bits.

Step 7

Return the chicken thighs to the skillet, skin-side up, and cover with a lid. Allow to simmer for 25–30 minutes, or until the chicken is fully cooked through (internal temperature of 165°F/74°C).

Step 8

Remove the chicken from the skillet and place it on a serving dish. Increase the heat slightly and let the sauce simmer for 2–3 minutes to thicken.

Step 9

Pour the sauce over the chicken and garnish with freshly chopped parsley.

Step 10

Serve warm with your favorite sides, such as rice, mashed potatoes, or roasted vegetables.
