Ingredients

  • 500 g lean ground turkey (or ground chicken)
  • 1 medium yellow onion, finely chopped
  • 2 medium carrots, diced
  • 2 medium celery stalks, diced
  • 100 g frozen peas
  • 2 cloves garlic cloves, minced
  • 240 ml low-sodium chicken or vegetable broth
  • 2 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 800 g potatoes, peeled and cubed
  • 120 ml low-fat milk
  • 2 tbsp light sour cream
  • 50 g grated reduced-fat cheddar cheese
  • 0.5 tsp salt (for potatoes)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Place the peeled and cubed potatoes into a large pot of salted water. Bring to a boil and cook until tender, about 12-15 minutes.

While the potatoes cook, heat olive oil in a large skillet over medium heat. Add the chopped onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables soften.

Add the minced garlic to the skillet and cook for an additional minute.

Stir in the ground turkey (or chicken). Cook for 5-7 minutes, breaking it up with a spatula, until it is browned and cooked through.
