Ingredients

  • 1 lb Boneless, skinless chicken breast
  • 12 oz Turkey sausage (smoked or andouille, reduced fat)
  • 2 tbsp Olive oil
  • 3 tbsp All-purpose flour
  • 1 medium Yellow onion, diced
  • 1 medium Green bell pepper, diced
  • 2 stalks Celery, diced
  • 3 cloves Garlic cloves, minced
  • 6 cups Low-sodium chicken broth
  • 1 14.5 oz can Canned diced tomatoes (no salt added)
  • 1 cup Okra, sliced
  • 2 Bay leaves
  • 1 tsp Paprika
  • 1 tsp Dried thyme
  • 0.25 tsp Cayenne pepper
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 4 cups Cooked brown rice
  • 2 tbsp Chopped parsley (for garnish)
  • 2 stalks Green onions, sliced (for garnish)

Directions

Step 1

Cut the chicken breast into bite-sized pieces. Slice the sausage into thin rounds. Set both aside.

Step 2

In a heavy-bottomed pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the flour and whisk constantly to create a roux. Cook for 5-7 minutes or until the roux turns a light golden brown.

Step 3

Add the diced onion, bell pepper, and celery to the roux. Sauté for 5 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute.

Step 4

Slowly pour in the chicken broth while stirring to incorporate the roux. Add the diced tomatoes, okra, bay leaves, paprika, thyme, cayenne pepper, salt, and black pepper. Stir well.

Add the chicken pieces and turkey sausage to the pot. Continue simmering for 20 minutes, or until the chicken is fully cooked and tender.

Remove the bay leaves and adjust seasoning to taste if needed.

To serve, spoon cooked brown rice into bowls and ladle the gumbo over the top. Garnish with chopped parsley and sliced green onions.
