Ingredients

  • 4 pieces Redfish fillets
  • 1 pound Shrimp (peeled and deveined)
  • 1 cup Mexican blend cheese (shredded)
  • 2 cups White or jasmine rice
  • 3 tablespoons Butter
  • 3 cloves Garlic (minced)
  • 2 tablespoons Olive oil
  • 1 teaspoon Paprika
  • 1 teaspoon Cajun seasoning
  • 1 Lime
  • 2 tablespoons Fresh parsley (chopped)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 cups Water

Directions

Step 1

Rinse the rice in cold water until water runs clear. In a medium saucepan, combine 2 cups of rice with 4 cups of water and 1 teaspoon of salt. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes, or until rice is tender and all the water is absorbed. Fluff with a fork and set aside.

Step 2

Season the redfish fillets with Cajun seasoning, paprika, black pepper, and a pinch of salt on both sides.

Heat a large skillet over medium heat and add 2 tablespoons of olive oil. Once hot, place the redfish fillets skin-side down in the skillet. Cook for 4-5 minutes on each side, or until the fish flakes easily with a fork. Remove from the skillet and set aside on a plate.

In the same skillet, add 1 tablespoon of butter and minced garlic. Sauté for about 30 seconds, or until fragrant. Add the shrimp and cook for 3-4 minutes until they turn pink and are cooked through.

Squeeze the juice of 1 lime over the cooked shrimp and add 1 tablespoon of chopped parsley. Stir to combine and remove the shrimp from the heat.

Preheat the oven to 375°F (190°C).

Place the cooked redfish fillets on a baking tray or oven-safe dish. Divide the shrimp mixture evenly over the fillets. Sprinkle shredded Mexican blend cheese generously over the top.

Bake the fish in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly.

Step 9

To serve, scoop a portion of rice onto each plate. Place a cheese-topped redfish fillet over the rice. Garnish with the remaining chopped parsley for a fresh finish. Serve immediately and enjoy!
