Ingredients

  • 450 grams button or cremini mushrooms
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic cloves, minced
  • 120 milliliters dry red wine
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon fresh thyme leaves
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Directions

Step 1

Wipe the mushrooms clean with a damp paper towel and slice them evenly if they are whole.

Step 2

Heat a large skillet over medium heat and add the olive oil and butter. Let the butter melt completely.

Step 3

Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant, being careful not to burn it.

Step 4

Increase the heat to medium-high and add the mushrooms to the skillet. Cook for about 7-8 minutes, stirring occasionally, until they release their moisture and begin to brown.

Step 5

Pour in the red wine and soy sauce, and sprinkle in the thyme leaves. Stir well to combine.

Step 6

Lower the heat to medium and let the mushrooms simmer for 5-7 minutes, stirring occasionally, until the wine reduces and forms a slightly thickened sauce.

Step 7

Season with salt and black pepper to taste. Adjust seasoning if necessary.

Step 8

Transfer the mushrooms to a serving dish and garnish with chopped parsley if using. Serve warm.
