Ingredients

  • 1 cup Fresh beet juice (or store-bought, unsweetened)
  • 2 cups Water
  • 0.75 cup Granulated sugar
  • 2 tablespoons Unsweetened cocoa powder
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Lemon juice
  • 3 drops Red food coloring (optional, for added vibrancy)
  • 0.25 teaspoon Salt

Directions

Step 1

In a small saucepan, combine the granulated sugar and water. Heat over medium heat, stirring occasionally, until the sugar has completely dissolved. Remove from heat and let cool slightly. This forms your simple syrup.

Step 2

In a mixing bowl, whisk together the beet juice, simple syrup, cocoa powder, lemon juice, vanilla extract, and salt until well combined. Ensure there are no lumps of cocoa powder.

Step 3

If using, add a few drops of red food coloring to enhance the color of the sorbet. Stir until evenly incorporated.

Step 4

Pour the mixture into a shallow, freezer-safe container. Cover with a lid or plastic wrap.

Step 5

Place the container in the freezer, and after 1 hour, use a fork to scrape and stir the mixture thoroughly to break up ice crystals.

Step 6

Repeat the scraping process every 30 minutes for the next 3-4 hours, or until the sorbet reaches a smooth, scoopable consistency.

Step 7

Once fully set, scoop into bowls or cones and serve immediately for a refreshing treat!
