Ingredients

  • 3 tablespoons vegetable oil
  • 2 tablespoons all-purpose flour
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 2 tablespoons tomato paste
  • 2 cups vegetable broth
  • 1 teaspoon white vinegar
  • 1 teaspoon granulated sugar
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

In a medium saucepan, heat the vegetable oil over medium heat.

Step 2

Add the all-purpose flour to the pan and whisk continuously to form a smooth roux. Cook for 1-2 minutes, stirring frequently, until it turns slightly golden.

Step 3

Stir in the chili powder, garlic powder, onion powder, ground cumin, and smoked paprika. Cook for 30 seconds to bloom the spices, stirring constantly.

Step 4

Add the tomato paste and continue to whisk until fully incorporated into the spice mixture.

Step 5

Slowly pour in the vegetable broth while whisking to avoid lumps. Continue whisking until the mixture is smooth.

Step 6

Bring the mixture to a simmer and reduce the heat to low. Allow it to cook for about 10 minutes, stirring occasionally, until the sauce thickens to your desired consistency.

Step 7

Stir in the white vinegar, granulated sugar, salt, and black pepper. Taste and adjust seasoning as needed.

Step 8

Remove the sauce from heat and let it cool slightly before using. Serve over enchiladas or your favorite Mexican dishes.
