Ingredients

  • 4 pieces red snapper fillets
  • 3 tablespoons olive oil
  • 3 cloves garlic cloves, minced
  • 4 large ripe tomatoes, diced
  • 2 tablespoons fresh basil leaves, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup white wine
  • 1 tablespoon capers (optional)

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Pat the red snapper fillets dry with paper towels and set them aside.

Step 3

Heat 2 tablespoons of olive oil in a large, oven-safe skillet over medium heat.

Step 4

Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 5

Add the diced tomatoes, salt, black pepper, and white wine to the skillet. Stir to combine, and cook for 5-7 minutes until the tomatoes start to break down and form a sauce.

Step 6

Stir in the fresh basil, parsley, and capers (if using). Reduce the heat to low and simmer for another 2-3 minutes.

Step 7

Place the red snapper fillets on top of the tomato mixture in the skillet. Drizzle the fillets with the remaining 1 tablespoon of olive oil and lemon juice.

Step 8

Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.

Step 9

Carefully remove the skillet from the oven and let it rest for 2 minutes before serving.

Step 10

Serve the red snapper fillets topped with the tomato mixture. Garnish with additional fresh parsley or basil if desired.
