Ingredients

  • 4 pieces Red snapper fillets
  • 3 tablespoons Olive oil
  • 1 cup Fresh basil leaves
  • 2 tablespoons Fresh lemon juice
  • 1 clove Garlic
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Baby spinach
  • 1 cup Cherry tomatoes

Directions

Step 1

Pat the red snapper fillets dry with paper towels and season both sides with half the salt and black pepper.

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the red snapper fillets skin-side down. Cook for 3-4 minutes until the skin is golden and crispy.
