Ingredients

  • 4 whole red bell peppers
  • 1 cup sun-dried tomatoes (packed in oil)
  • 2 tablespoons olive oil
  • 1 medium, diced yellow onion
  • 3 cloves, minced garlic
  • 4 cups vegetable broth
  • 0.5 cup heavy cream
  • 1 teaspoon dried basil
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoon ground black pepper
  • 1 cup, shredded Swiss cheese
  • 2 tablespoons, chopped (optional, for garnish) fresh parsley

Directions

Step 1

Preheat your oven to 425°F (220°C).

Cut the red bell peppers in half lengthwise, removing the stems, seeds, and membranes.
