  • 4 caps Portabella mushrooms
  • 2 whole Red bell peppers
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 cups Fresh spinach leaves
  • 1 medium Avocado
  • 4 pieces Whole wheat tortilla wraps
  • 0.5 cup Hummus
  • 1 tablespoon Lemon juice

Directions

Step 1

Preheat your oven to 400°F (200°C).

Clean the portabella mushroom caps with a damp paper towel and remove the stems.

Step 3

Slice the red bell peppers into quarters, removing the seeds and stems.

On a baking sheet, arrange the mushroom caps and red pepper slices. Drizzle them with olive oil, then sprinkle with garlic powder, cumin, salt, and black pepper.
