Directions

Step 1

Peel and thinly slice the red onions. Mince the garlic cloves.

In a large, heavy-bottomed pot, melt the butter with olive oil over medium-low heat.

Add the sliced red onions, garlic, thyme sprigs, and bay leaf into the pot. Sauté gently, stirring frequently, for 25–30 minutes until the onions are deeply caramelized and golden brown.

Deglaze the pot by pouring in the white wine, scraping up any browned bits from the bottom. Let it simmer for 2–3 minutes until the wine has reduced by half.
