Ingredients

  • 200 g red lentils
  • 1 yellow onion
  • 3 garlic cloves
  • 1 tbsp fresh ginger
  • 400 g tomatoes (chopped)
  • 400 ml coconut milk
  • 500 ml vegetable stock
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 0.5 tsp red chili flakes
  • 3 parsnips
  • 3 tbsp olive oil
  • 0.5 tsp ground paprika
  • 2 tbsp fresh cilantro (chopped)
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Rinse the red lentils under cold water until the water runs clear. Set aside.

Step 2

Peel and finely chop the onion, garlic, and ginger.

Step 3

Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the onion and sauté for 3-4 minutes, or until softened.

Add the garlic, ginger, ground cumin, ground coriander, ground turmeric, and red chili flakes to the pot. Stir and cook for 1-2 minutes until the spices become fragrant.

Stir in the chopped tomatoes and cook for 5 minutes, allowing them to break down.

Add the rinsed lentils, coconut milk, and vegetable stock to the pot. Stir well, then bring to a gentle boil.
