Ingredients

  • 1 cup red lentils
  • 0.25 cup fine bulgur

  • 1 medium onion
  • 2 garlic cloves

  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried mint
  • 0.5 teaspoon chili flakes (optional)
  • 6 cups vegetable stock or water
  • 1 lemon
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Rinse the red lentils and bulgur thoroughly under cold water until the water runs clear. Drain and set aside.

Peel and finely chop the onion and garlic.

Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for 3–4 minutes until softened and translucent.
