  • 1.5 lbs red potatoes
  • 1 lb red hot sausage (or spicy smoked sausages)

  • 1 medium red bell pepper
  • 1 medium yellow onion
  • 2 garlic cloves
  • 1 tsp paprika
  • 0.5 tsp cayenne pepper
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley (for garnish)

Directions

Step 1

Wash and dice the red potatoes into 1-inch cubes. Set them aside in a bowl of cold water to remove any excess starch.

Step 2

Slice the red hot sausage into 1/2-inch rounds. Dice the red bell pepper and onion into bite-sized pieces. Mince the garlic cloves.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage and cook for 5-7 minutes, stirring occasionally, until browned. Remove the sausage from the skillet and set aside.
