  • 1 can (13.5-ounce) coconut milk
  • 1 tablespoon (freshly squeezed) lime juice
  • 1 teaspoon (or to taste) salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons (chopped, for garnish) fresh cilantro
  • 2 tablespoons (chopped, for garnish) toasted peanuts

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onion and cook for 3-4 minutes until softened and translucent.
