Ingredients

  • 500 g boneless pork shoulder
  • 3 tbsp red curry paste
  • 400 ml coconut milk
  • 2 medium apple (preferably firm varieties like Granny Smith, Fuji, or Honeycrisp)
  • 2 tbsp vegetable oil
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 3 kaffir lime leaves (optional, for garnish)
  • 1 small red chili (optional, for garnish)
  • 2 tbsp fresh cilantro (for garnish)
  • 4 servings jasmine rice (cooked, for serving)
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Cut the pork shoulder into bite-sized slices or cubes. Season with salt and black pepper. Set aside.

Step 2

Peel, core, and thinly slice the apples. Set aside.

Step 3

In a large skillet or wok, heat the vegetable oil over medium heat.

Step 4

Add the red curry paste to the skillet and sauté for 1-2 minutes until fragrant.

Step 5

Pour in the coconut milk and stir until the curry paste is fully dissolved into the liquid.

Step 6

Add the fish sauce and brown sugar to the skillet and stir to combine.

Step 7

Add the seasoned pork to the skillet. Lower the heat to medium-low and simmer for 15-20 minutes, stirring occasionally, until the pork is tender and cooked through.

Step 8

Once the pork is nearly cooked, add the sliced apple to the skillet. Stir gently and cook for another 5-7 minutes until the apples have softened but still retain some bite.

Step 9

Taste the curry and adjust seasoning, adding a little more fish sauce or sugar if needed.

Step 10

Garnish the dish with chopped cilantro, thinly sliced red chili, and kaffir lime leaves if using.

Step 11

Serve hot with cooked jasmine rice on the side. Enjoy!
